CHICKEN IN RED SAUCE                                                        Serves: 4

Ingredients:

10 New Mexico Chiles, de-stemmed
8 Chicken drumsticks
2 Tomatoes
1 Onion
4 Teaspoons, granulated garlic
1 Teaspoon, salt
1 Teaspoon, vegetable oil
2 Cups, chicken stock
10 Cups, water


Instructions:
Place chicken drumsticks into a large saucepan; add 8 cups of water, ¼ onion, 2 teaspoons of granulated garlic, and 1 teaspoon of salt. Bring to boil and simmer for 30 minutes, or until cooked. Let cool for 20 minutes.  In a different saucepan; meanwhile, place chiles, 2 tomatoes and 2 cups of water. Bring to a boil and simmer for 20 minutes. Let cool. Transfer ingredients to a blender; add 2 cups of chicken stock, ¼ onion, and 2 teaspoons of granulated garlic. Blend for 2 minutes or until a purée forms. Heat a different large saucepan over medium-high heat; add 1 teaspoon of vegetable oil. Using a strainer pour sauce and add chicken drumsticks into saucepan. Cook for 15 minutes, then enjoy.
